No, the project calendar can infact be set to have different start and finish times for different days, it can aslo be set for longer or shorter days. But, it is recommended that things are kept simple and the project calendar is set to a flat working week with the same start and finish times for Monday to Friday.

Workings Times (base) Calendars do not determine how many hours there are in a day and a week. It is the calendar options (Tools, Options, Calendar tab) that set the number of hours in the day and hours in a week.
